2 1/2 pounds boneless pork loin roast, trimmed of visible
fat
1 cup light pancake syrup
4 tablespoon Dijon-style mustard
2 1/2 tablespoons cider vinegar
2 1/2 tablespoons light soy sauce
Ground black pepper to taste
Salt to taste
Combine syrup, mustard, vinegar, soy sauce, salt and pepper.
Place pork roast in a greased roasting pan and spread the glaze mix
evenly over it. Bake in a 350 degree oven for an hour to an hour and
a half, or until the internal temperature reaches 160 degrees (use a
meat thermometer). Let rest several minutes before slicing.
