Maple Nut Brittle

3 cups pure maple syrup
Peanuts, pecans or other nuts, enough to cover 13’by18’ shallow pan
3 tablespoons melted butter
Salt to taste
1 teaspoon baking soda

Layer nuts in a pan and roast at 325 degrees for 10 minutes. Salt to taste. Place the syrup in a pot, bring to a boil and cook to 300 degrees. Stir in the baking soda and melted butter, whip slightly, then quickly pour the mixture over the nuts. When cool, break up and enjoy.
