Maple Icing

2 egg whites
1/4 teaspoon salt
1/2 cup maple syrup
1/4 teaspoon cream of tartar
3/4 cup sugar
1 teaspoon vanilla

Combine all but the vanilla atop a double boiler and cook, beating constantly, until the mixture stands in peaks. Add the vanilla and continue beating until thick.
