1/2 cup maple syrup
3 large egg yolks
1 large egg
1-1/2 cups whipping cream
1/2 cup whole milk
granulated maple sugar
Whisk the maple syrup, yolks and the egg together. In
a saucepan, combine the whipping cream and milk and bring to a boil.
Slowly whisk the cream/milk mixture into the eggs.
Pour mixture into custard dishes and set in a roasting
pan with enough hot water in it to come halfway up the sides of the
dishes. Cover with foil and bake in a 325 degree oven about 55 minutes
or until the custards set up. Remove from oven and chill until cold.
To serve, top with maple sugar and then melt the sugar either with a
blow torch or under the broiler.
