1 1/3 cups flour
2 eggs
2/3 cup cornmeal
2/3 cup milk
3 teaspoons baking powder
1/2 teaspoon salt
1/3 cup Maple Syrup
1/2 cup melted shortening
Beat the eggs and add the milk, syrup and shortening.
Sift together the dry ingredients and stir quickly into the moist, being
careful not to over stir. Pour into greased muffin tin and bake at 425
degrees for 20 minutes. Makes a dozen muffins.
